During the printing process, the ink is sprayed onto rice paper, or frosting paper, which is food-grade paper made of starches and sugars. Because the paper is water soluble, it dissolves when it touches the frosting on a cake, thereby leaving just the printed image. You can also purchase specialty backings that dissolve only under certain conditions.
